Plain Potato Soup

Ingredients

  • 8-9 Medium potatoes
  • 3 cups chicken broth (or 3 bouillon cubes with 3 cups water)
  • 1 cup water
  • 2 teaspoons dried chopped onions
  • grated cheddar cheese
  • salt and pepper

Directions

Peel potatoes, clean and slice into large hunks (around 1/2 of an inch - 3/4 of an inch). Place potatoes, water, broth, dried onions in a 4 quart saucepan. Boil until potatoes show softening around the edges. Skim scum from top of water. Reduce heat to medium and simmer for 10-15 more minutes. Stir potatoes so that pieces will break from the edges to thicken the water a bit. When the soup is the consistency that you like, remove from heat. Taste soup, add salt and peeper if needed. Pour into serving bowls, sprinkle with cheese.

serves 4-6

Note: The broth can be any flavor that you prefer, chicken, beef, or vegetable. If you use bouillon cubes you can mix flavors, such as 2 chicken and 1 beef.
