Zucchini

My garden loves me I think. My 4 zucchini plants have been plagued with squash vine borers for several weeks now. The stems are pitted but they root and grow. I'm glad too, my family has discovered that they like how I cook zucchini. These are about to be blanched and frozen.

In case someone is wondering how I cook them. The zucchini are laid out on a flat cookie sheet or a mesh type thing. They then get the following spread or sprinkled on each one: olive oil, salt, oregano (or an Italian herb mix), and Parmesan cheese. Then they are broiled until golden.

    It’s been 8 days since this picture was taken and the plants are still bearing a zucchini every few days even though the stems are yellow and pitted. The plants have slowed down a lot. Tomorrow I hope to spray some food on them. I use liquid kelp. =)

    Oooh, that sounds good! My family likes my "zucchini stuff." I sautee it with shallots in olive oil and butter. When it’s almost done I fold in sliced tomato, then sprinkle it with mozzarella cheese. Your zucchini stuff sounds healthier than mine! LOL
